Mindful Cooking with Geo: Stuffed Green Peppers

Cooking is a relaxing, mindful activity I do to unwind. It is also a good way to share healthy ideas and connect with others. Although we might be remote for the summer, everyone still has to eat, so why not share what you're doing to be well this summer!
I wanted to make something with a lot of vegetables and low in sugar and carbs. My recipe for stuffed green peppers is keto and paleo friendly, low-carb, and good for anyone watching their sugar levels. Enjoy!
Stuffed Green Peppers
- 2.5 tablespoons nutritional yeast
- 1 cup of vodka sauce (no added sugar and low in carbs)
- 1 small can of tomato paste (no added sugar)
- 1/2 cup mozzarella cheese
- Blend of Italian seasoning
- Tablespoon of Himalayan salt
- Dash of black pepper and steak seasoning
- For vegetables, I added celery, carrots and cauliflower
- I cooked the meat then added the vegetables and let simmer on low for 5 - 7 minutes
