Celebrating Vegetarian Awareness Month at Carnegie Mellon University

October marks Vegetarian Awareness Month, a time to celebrate the benefits of plant-based eating and to explore the vibrant world of vegetarian cuisine. Whether you're a lifelong vegetarian, a curious flexitarian, or someone who loves a good hummus bowl, CMU has something delicious waiting for you.

CMU proudly offers 18 dining concepts across campus which serve a variety of flavorful vegetarian dishes that go beyond the basics. From global flavors to comfort food classics, here’s a taste of what you’ll find:

  • Caprese Sandwiches: Fresh mozzarella, juicy tomatoes, and basil layered on fresh bread
  • Falafel: Crispy chickpea patties served in wraps or bowls, often paired with creamy tahini and fresh veggies
  • Paneer Dishes: Indian-style cottage cheese cooked in rich sauces 
  • Hearty Soups: Think lentil, tomato bisque, and vegetable minestrone—perfect for Pittsburgh’s crisp autumn days
  • Flavorful Salads: Nutrient-dense, crisp veggies, often served with your choice of toppings, dressings and add-ons
  • Hummus Bowls: Creamy hummus, often topped with roasted veggies and grains
