National Nutrition Month® Kick-Off Event and Superfood Sampling

March is National Nutrition Month® (NNM) and Dining Services is cooking up a month-long celebration of healthy eating! Join us for our kick-off event, which will feature games, prizes, free food and tips for optimizing your health through good nutrition. Sample an allergen-friendly superfood recipe prepared by the Nourish chefs.

Let’s Get Cooking! Workshop Series

Sharpen your culinary skills through our series of cooking workshops that will offer
the tips and tools to become a more confident cook! These events are FREE; seats are limited and registration is required. 

Knife Skills: Basic Cuts & Knife Safety
(Two Sessions Available)

Wednesday, March 6, 5:00 PM – 5:30 PM
The CMU Pantry, Residence on Fifth, 1st Floor

Take your kitchen prep skills to the next level and learn how to use a knife like a professional! Mark Hastie, operator of The Underground, will teach you how to safely and confidently use a chef’s knife to dice, mince, julienne and chiffonade a variety of fresh vegetables and herbs! You will learn to butcher a whole chicken (demonstration only).

Participants will be able to take home the vegetables they chop and a cup of either chicken noodle or vegan vegetable soup.

Teaching Kitchen: Quinoa Crunch Shaker Salad

Thursday, March 14, 12:30 pm – 1:30 pm, Danforth Conference Room

Create a fresh and flavorful Quinoa Crunch Shaker Salad at this hands-on Teaching Kitchen with Chartwells Chef Jeremy Neiderhiser and Dining Services Registered Dietitian Jessica Tones. Learn to slice and dice fresh veggies, toast quinoa and whisk together a fresh lemon vinaigrette – layered in a mason jar that you can take home and use again for simple meal planning. Participants can select to top their salad with chicken or edamame and enjoy a fruit and yogurt parfait for dessert. Please consider bringing a non-perishable food donation for The CMU Pantry and help us combat food insecurity on campus!

This event is FREE to members of the CMU community, but seats are limited.

Teaching Kitchen: Perfect Pan Sauce
(Two Sessions Available)

Learn to create the perfect dish by building layers of flavor through searing, sautéing, deglazing and reduction – all in one pan! Chartwells Chef Jeremy Neiderhiser will teach you simple skills to make a chef-quality mushroom pan sauce at home with just a few simple ingredients. Participants will be able to enjoy the dish they create served over brown rice.
