Nourish, CMU's allergen-friendly dining location, is now certified by Kitchens with Confidence.
Kitchens with Confidence™ (a wholly owned subsidiary of MenuTrinfo™, LLC) is the leading full-service kitchen auditing service and “certified free from” authority for today’s foodservice operations. Officially launched in 2017 and backed by the ANSI-accredited allergen training leader in the industry, AllerTrain, Kitchens with Confidence has become the external certification arm for the top eight food allergens and gluten.
Nourish features a menu prepared without gluten, wheat, milk, egg, soy, fish, shellfish, peanuts, and most tree nuts (except coconut). Food items that include coconut are clearly labeled on the menu or on product packaging.
In addition to offering a diverse and delicious menu designed with everyone in mind, Nourish serves safe foods for our guests with dietary restrictions. Nourish ensures the following:
- All food is prepared and sealed in a dedicated kitchen that does not handle gluten, wheat, milk, egg, soy, fish, shellfish, peanuts, and most tree nuts (except for coconut).
- Simple ingredients without hidden additives and preservatives
- Food service staff who are trained and highly knowledgeable about food allergens and cross-contact prevention
- Routine equipment and food sample testing to ensure food safety commitments
Menu items include salads, sandwiches, bowls, pizza, and hot entrees, as well as a number of vegan offerings. All food is prepared and sealed in a dedicated kitchen by food service staff who are trained and highly knowledgeable about food allergens and cross-contact prevention.
